We asked the FIT Arkansas team for their go-to healthy recipes. Here's what our crew keeps in the menu rotation.

Crock Pot Turkey Chili from Alex Howland

Ingredients:

  • 1/2 lb. ground lean Turkey
  • 1 green pepper
  • 2 jalapenos
  • 1 onion, medium to small and yellow or white
  • 1 can black beans
  • 1 can pinto beans
  • 1 can diced tomatoes (opt for low or no sodium)
  • 1 can diced green chiles
  • 1/4 cup chili powder
  • salt, pepper and oregano to taste
  • 1-2 garlic cloves (or garlic powder, if you prefer)
  • plain Greek yogurt for garnish
  • shredded cheddar for garnish

Directions:

  1. Chop green pepper, seeded jalapenos and onion and add to crock pot.
  2. Rinse black beans and pinto beans, then add to the crock pot.
  3. Add diced tomatoes and green chilli to the crock pot, then add spices.
  4. Brown the turkey and add to crock pot.
  5. Set your crockpot on high for 3-4 hours and enjoy!
