We asked the FIT Arkansas team for their go-to healthy recipes. Here's what our crew keeps in the menu rotation.

Crock Pot Seasoned Chicken, Potatoes and Green Beans (Gluten Free) from April Scott

Ingredients:

  • 1 1/2 lbs. boneless skinless chicken breasts
  • 2 garlic cloves
  • 1/2 lb. green beans, fresh
  • 1/4 tsp. onion powder
  • 1 tsp. dried oregano
  • 1 1/4 lbs. red potatoes
  • 1/3 cup fresh lemon juice
  • 1/4 tsp. pepper
  • 1 tsp. salt
  • 1/4 cup olive oil

Directions:

  1. Start by placing the chicken in the center of a 6-quart slow cooker.
  2. Next add the green beans on one side, then mound the potatoes high off to the other side.
  3. In a medium sized bowl, whisk together lemon juice, olive oil, oregano, salt, pepper, onion powder and garlic cloves.
  4. Pour this mixture evenly over the chicken, green beans and potatoes.
  5. Cover and cook on high for 4 hours, without opening the lid during the cooking time.

Pro tip: Do NOT use lemon juice out of a squeeze bottle and expect this to taste as good!
